Yum! David's verdict: "The best I've had fish in a long time!"
Ingredients
1/4 c. Italian seasoned bread crumbs
2 T. grated Parmesan cheese
2 T. grated Romano cheese
1/4 tsp. garlic powder
1/2 tsp. salt, or to taste
1 lb orange roughy fillets
1/4 c. butter or margarine, melted

Directions
1. Preheat oven to 400 degrees F. Coat a medium baking dish with non-stick cooking spray.
2. In a shallow bowl, mix bread crumbs, Parmesan cheese, Romano cheese, garlic powder, and salt.
3. Brush both sides of orange roughy fillets with butter, and dredge in the bread crumb mixture. Arrange fillets in a single layer in the prepared baking dish, and sprinkle with parsley. I add remaining butter to bottom of dish, and sprinkle remaining crumb mixture on top of the fillets.
4. Bake in preheated oven 10 to 15 minutes, or until the fish flakes easily with a fork (could be up to 30 min.)
Fed two adults for one meal (but, then, we didn't have any sides).
I found a delightful sauce to use with these - it's Orange-Scented Tomato Sauce and it made enough for two meals. No sides.
