Yum!
4 skinless, boneless chicken breast halves -- pounded into 1/4 inch thickness
1/4 lb Swiss cheese, sliced
1/4 lb ham (I like the Virginia ham at the Walmart deli), sliced thin
2 T grated Parmesan cheese
1 1/2 tsp paprika
1/2 tsp garlic salt
1/2 tsp dried tarragon
1/2 tsp dried basil leaves
1 T butter, melted
1/3 c. dry bread crumbs (I used "italian seasoned".)
Place Swiss cheese and ham slices on top of chicken breasts. Roll up, securing with toothpicks if necessary. In a small bowl combine the Parmesan cheese, paprika, garlic salt, tarragon, basil and bread crumbs. Mix together and dip rollups in mixture to coat. (I sprinkled the remaining mixture over the top.)
Drizzle with melted butter and cook in 350 degree oven for 45 min.
Seriously delish.

Baked Fried Chicken
Found it on Pinterest. Tried it tonight. I'm a fan. It doesn't have the same texture as fried chicken, but it really does taste like the colonel's original recipe. Love it. I was sad when I was full. My mouth wanted more!
